No, none of the servers have vac at all. There are no official valve servers. CAC something you have to worry about though.

FireFlower is right you cannot get VAC banned but you could possibly with the wrong cheat get banned from the gmod server you were playing on :-\

In gmod disabled vac can ban only anti-cheat on the server
